Food Safety authorities in Kollam have launched a rigorous crackdown on violations under Operation Thelima, a special initiative launched in response to widespread complaints over the repeated use of recycled cooking oil in local eateries. Deploying six specialised squads across the city, food safety officials inspected 96 establishments, resulting in the immediate shutdown of eight shops operating without mandatory licenses or medical certificates. An additional 14 unhygienic stores were issued compounding notices and fines.
The inspections were carried out using Total Polar Compound (TPC) meters and a mobile testing laboratory to verify the quality of used cooking oil. A total of 24 oil samples were collected from various eateries and tested to ensure compliance with quality standards. During the inspections, officials discovered that some roadside food stalls were wiping utensils clean with cloths instead of washing them properly with water. Notices were also issued to establishments plagued by heavy fly infestations.
The inspection further revealed violations concerning improper waste management and failure to maintain clean surroundings. Strict directives were issued to owners to ensure that all food items are kept covered and that customers are provided with boiled and cooled drinking water. The Assistant Commissioner of Food Safety stated that these rigorous inspections will continue in the coming days.
